Crustless Mini Quiches
12oz can Evaporated Milk
3 Large Eggs
2 Tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups shredded cheese
2 cups chopped,frozen broccoli,thawed&drained
1/2 cup chopped red bell pepper
Directions
Preheat oven to 350.
Grease & lightly flour twelve 2 1/2" muffin pans
Whisk milk,eggs,flour,salt&pepper together until blended.
Stir in cheese,broccoli & bell pepper.
Spoon1/4 to 1/3 cup of mixture into each pan,filling almost to rim.
Stir mixture frequently to evenly distribute ingredients.
Bake for 23 to 28 minutes or until center is set & top is lightly browned.
Cool in pans for 15 minutes.
Run knife around edges.
Carefully remove quiches.
Serve with bacon & hash browned potatoes.
1 lb bulk sausage
4 slices of bread, cut into 1/2'' cubes
6 to 8 eggs
2 cups of milk
1 cup of shredded cheddar cheese
1/2 tsp. salt
1/2 tsp. dry mustard
Crumble sausage in a medium skillet
Cook until brown.
Drain well.
Spread bread cubes in a buttered 12 x8 x 2 baking dish.
Top with sausage and cheese.
Combine eggs,milk,seasonings and beat well.
Pour over cheese.
Cover and refrigerate over night.
Bake at 375 degrees for 30-40 minutes or until set.
Easy Peach Cobbler
1/2 cup melted butter
1 cup all-purpose flour
2 cups sugar ( divided )
3teaspoons baking power
pinch of salt
1 cup of milk
4 cups peeled,pitted and thinly sliced fresh peaches ( 5-6 medium peaches )
1 tbsp fresh lemon juice
Several dashes ground cinnamon or nutmeg
Preheat oven to 375 degrees
Pour the melted butter into a 13x9x2 baking dish.
In a medium bowl, combine flour, 1 cup sugar, baking powder and salt mix well.
Stir in milk , mixing until just combined.
Pour this batter over the butter ,DO NOT STIR THEM TOGETHER.
In small saucepan, combine the peaches, lemon juice and remaining sugar.
Bring to a boil over high heat, stirring constantly.
Pour peaches over batter. DO NOT STIR TOGETHER.
Sprinkle with cinnamon or nutmeg.
Bake for 40 to 45 minutes or until top is golden brown.
Serve with whip cream on top.
